Title: Mini Bow Ties with Feta Cheese

1 1/2 | c | Egg mini bow tie pasta |
4 | oz | Feta cheese |
1 | sm | Red onion; chopped |
2 | tb | Extra virgin olive oil |
1/4 | c | Italian parsley; chopped |

Cook and drain the pasta. Crumble feta cheese; set aside. In a med. frying pan, heat olive oil for 1 min. Add the onion; cook, stirring often until shiny and tender, about 2 mins. Add Italian parsley, salt, and pepper to taste. Remove from heat. In a lg. bowl, combine the pasta, cheese and onion mixture. Yield - 4 to 6 servings.
