Title: WW Fettuccine Supreme

1/2 | c | Ricotta cheese; part skim |
1/4 | c | Milk; skim |
1 | | Margarine;1 T plus 1 t |
3 | oz | Prosciutto ham, diced |
1 | | Garlic; clove, minced |
1 | c | Broccoli; cooked, chopped |
2 | c | Fettucine; cooked |
1 | oz | Cheese; Parmesan, grated |
1 | | Pepper; dash of white |
2 | tb | Parsley; chopped fresh |
In blender container combine ricotta cheese and milk and process until
smooth; set aside. In 9-inch skillet heat margarine until bubbly and hot;
add prosciutto and garlic and saute until garlic is golden, about 1 minute.
Add broccoli and cheese mixture and cook over medium heat until sauce
begins to bubble. Reduce heat and add remaining ingredients except parsley;
cook, stirring and tossing gently, until fettucine is thoroughly coated
with sauce.
Serve sprinkled with parsley. EACH SERVING PROVIDES: ~1 1/2 p, 1 B, 1/2 V,
1 F, 5 calories optional. Per serving: 267 calories; 17 g protein; 12 g
fat; 24 g carbohydrate; 238 mg calcium; 424 mg sodium; 59 mg cholesterol.
