Confit some garlic cloves. In about a quart of olive oil slowly cook 25 - 30 cloves (until brown and soft). You'll be surprised how often this will be used. To make pasta with garlic - place some of the garlic oil in a saute pan with a few of the cloves - heat slightly. Brown a tablespoon of minced garlic. Add a cup of chicken stock and reduce a bit. Toss in any cooked pasta and finish with grated cheese, chopped basil and parsley and season to taste.
