Title: Onion Sauce with Eye Round Roast Beef

3 | lb | Onions; diced |
4 | lb | To 6-lb. eye round roast |
2 | cn | Italian plum tomatoes |
1/4 | c | Fresh basil; chopped |
1 | ts | Salt |
2 | lb | Lg. bow ties macaroni |
3 | tb | To 4 tbsp olive oil; OR |
4 | tb | Salt pork; diced |
1 | cn | Tomato paste |
2 | cl | Garlic |
1/2 | ts | Pepper |
Saute diced onions about 20 mins. in olive oil, stirring every few mins. Add tomato paste and cook for 2-3 mins. Put plum tomatoes in blender for a few seconds, just to blend; add tomatoes and garlic to pot with onions and paste.
In separate pan, brown eye round on all sides in a small amount of oil. Add meat to sauce and simmer slowly for 3 hrs. Remove garlic cloves. Carve roast into thin slices and serve with extra sauce. The lg. quantity of onions makes this a sweet, delicous sauce. Serves 8 to 10.
