Title: Green Spaghetti Salad

1 | lb | Green spaghetti, broken |
| | Into 4-inch pieces |
1/2 | c | Mixed fresh parsley and |
| | Chervil |
1/2 | c | Tarragon vinegar |
1/2 | c | Olive oil |
4 | | Shallots, peeled & chopped |
4 | cl | Garlic, chopped |
1/4 | lb | Freshly grated Parmesan |
1/2 | ts | White pepper |
1/4 | c | Pine nuts |
Cook spaghetti according to package directions;drain. Remove tough stems
from fresh herbs. Pureee herbs, vinegar, and oil together in blender or
food processor. Add shallots and garlic to pureed herb mixture. Add grated
cheese and pepper. Toss pasta with pureed mixture. Add pine nuts; mix well.
Cover and refrigerate for 1 hour before serving. Creative Cooking-Pasta
