Title: Strawberry Rice Pudding

2cSkim milk
1/4tsGround nutmeg
1/8tsGround allspice
1/8tsSalt
1/3cLong-grain rice
2tsMargarine or butter
1 To 1 1/4 tsp. EQUAL MEASURE or 3 or 4 pkts. EQUAL
2 1/2cSlice strawberries
  Skim milk - optional

SOURCE: Equal Sweet News, Volume 1, number 2, March 1994... MM format by Ursula R. Taylor. In a heavy 2 quart saucepan bring 2 cups skim milk, spices and salt just to boiling. Stir in rice. Cover; cook over low heat about 30 minutes or till most of the milk is absorbed, stirring occasionally. Remove from heat. Stir in margarine and EQUAL MEASURE. Cool, cover and chill. Just before serving, fold in berries. Serve with additional milk, if desired. Makes 6 - 1/2 cup servings. NUTRITIONAL INFORMATION per serving: 102 calories, 4 g. protein, 18 g. carbohydrate, 2 g. fat, 1 mg. cholesterol, 103 mg. sodium. DIABETIC EXCHANGES - 1/2 milk, 1/2 fruit and 1/2 bread.
