2 | ts | Thyme, dried |
1 | md | Onion, chopped |
2 | Carrot, peel/chop | |
2 | Leeks, trim/chop | |
2 | Celery stalks, chopped |
The Hotel D'Angleterre, in Copenhagen, opened in 1755. It is a national landmark and the soup they serve, Yellow Split Pea, is Denmark's national soup.
1-Soak the split peas in water to cover overnight; rinse and drain. OR you can simmer peas for 45 minutes in boiling water; drain. 2-Place peas and the 2 quarts fresh water into a saucepan. Add the remaining ingredients and simmer until tender, about 1 1/2 to 2 hours. Stir occasionally. 3-Puree the soup in a food processor until smooth.
