Title: Blueberry Potato Salad

Yield: 6 Servings

1/4cWhite Wine Vinegar
1tbOlive Oil
1/2tsSugar
1/2tsSalt
1/2tsDried Basil; Crushed
1/8tsBlack Pepper
4cPotatoes; Cooked And Sliced
1cFresh Blueberries
1/2cCucumber; Diced
1/2cCarrot; Shredded
2tbScallions; Chopped
2tbParsley; Chopped

Prepare the dressing by combining the vinegar, oil, sugar, salt, basil, and pepper, blending well. In a large bowl, combine the dressing with the potatoes, mixing well. Stir in the blueberries, carrot and cucumber. Sprinkle with the chopped scallions and parsley.
