4 | Med Idaho potatoes, peeled | |
And diced | ||
4 | Boneless chicken breast | |
Halves, coked & diced | ||
1 | lg | Cucumber, seeded, diced |
2 | Hard cooked eggs, chopped | |
4 | ts | Fresh snipped dill |
2 | ts | Salt |
1/4 | ts | Black pepper |
Lettuce leaves | ||
1 | c | Mayonnaise |
The idaho Potato commission obtained this recipe on a trip to Moscow. Cook potatoes in water until tender. Drain. In a large bowl toss potatoes with chciken, cucumbers and eggs, dill, salt and pepper. Line a large platter with lettuce leaves and dome on mixture. Spread with mayonnaise to completely cover salad dome.
