	4 l	b Yukon gold potatoes -- small
:		dice
	16 o	z Italian vinaigrette
	3 o	z scallions -- diced
	3 o	z fresh parsley -- finely
:		chopped
	2 o	z Dijon mustard
1	/4 o	z white pepper
	12 o	z celery -- diced
	1 o	z tarragon -- chopped or
:		grated

Boil potaoes until fork-tender. Combine all ingredients. While potatoes are still warm, toss in dressing. Refrigerate.
