Title: Yukon Gold Potato Salad

Yield: 15 Servings

 4 lb Yukon gold potatoes -- small
: dice
 16 oz Italian vinaigrette
 3 oz scallions -- diced
 3 oz fresh parsley -- finely
: chopped
 2 oz Dijon mustard
1/4 oz white pepper
 12 oz celery -- diced
 1 oz tarragon -- chopped or
: grated

Boil potaoes until fork-tender. Combine all ingredients. While potatoes are still warm, toss in dressing. Refrigerate.
