3 o | z scallions -- diced | |
3 o | z fresh parsley -- finely | |

2 o | z Dijon mustard | |

12 o | z celery -- diced | |
1 o | z tarragon -- chopped or | |

Boil potaoes until fork-tender. Combine all ingredients. While potatoes are still warm, toss in dressing. Refrigerate.
