Title: Creamy Sweet Potato Salad

Yield: 14 Servings

 2 cMayonnaise
1/3 cButtermilk
 2 TB Lemon juice
 1 TB Dijon mustard
 1 ts Sugar
 3 lb Sweet potatoes; cooked --
: peeled and cubed
 1 cPeas
1/2 cSweet red pepper -- OR
: green
1/2 cGreen onions -- sliced
 1 bn Fresh spinach
 3Bacon strips -- cooked and

1. In a bowl, blend mayonnaise, buttermilk, lemon juice, mustard and sugar until smooth. 2. In a large bowl, combine sweet potatoes, peas, pepper and onions. 3. Pour dressing over all and toss to blend. 4. Chill at least two hours or overnight.

TO SERVE: Spoon salad into a large brown lined with spice and and top with bacon.
