Title: Creamy Sweet Potato Salad

Yield: 14 Servings
2 c | Mayonnaise | |
1 | /3 c | Buttermilk |
2 T | B Lemon juice | |
1 T | B Dijon mustard | |
1 t | s Sugar | |
3 l | b Sweet potatoes; cooked -- | |
: | peeled and cubed | |
1 c | Peas | |
1 | /2 c | Sweet red pepper -- OR |
: | green | |
1 | /2 c | Green onions -- sliced |
1 b | n Fresh spinach | |
3 | Bacon strips -- cooked and |
1. In a bowl, blend mayonnaise, buttermilk, lemon juice, mustard and sugar until smooth. 2. In a large bowl, combine sweet potatoes, peas, pepper and onions. 3. Pour dressing over all and toss to blend. 4. Chill at least two hours or overnight.
TO SERVE: Spoon salad into a large brown lined with spice and and top with bacon.
