Title: Ranch Pudding

Yield: 9 Servings
2 | c | Brown sugar; firmly packed, divided |
2 1/2 | c | -Water |
2 | tb | Butter |
1 1/4 | c | Buttermilk baking mix |
1 | c | Raisins OR |
1 | c | Dates; chopped |
1/2 | c | To 1 cup chopped nuts |
1 | ts | Vanilla extract |
1/2 | c | Milk |
Preheat oven to 350~. In a saucepan, blend 1 cup brown sugar with water and butter. Bring to a boil and continue boiling for 5 mins. Stir frequently. Pour into an 8" square baking pan. Set aside. In a bowl, combine 1 cup brown sugar, baking mix, raisins/dates, nuts, vanilla, and milk. Spoon batter over sugar mixture. Batter will sink into sugar mixture and then spread as it bakes. Serve warm with whipped cream, if desired.
