Title: Bread Pudding with Lemon Sauce

BREAD PUDDING | ||
1 1/2 | c | Milk |
1 | tb | Butter |
2 | c | Stale bread cubes |
2 | Eggs; slightly beaten | |
1/4 | c | Crushed pineapple; well drained |
1/2 | c | Sugar |
1/4 | ts | Nutmeg |
1/4 | ts | Cinnamon |
1 | ts | Vanilla extract |
1/4 | ts | Yellow food colouring |
Lemon sauce | ||
LEMON SAUCE | ||
1 1/2 | ts | Cornstarch |
2 | ts | -cold water |
3/4 | c | Half and half |
3 | tb | Sugar |
2 | ts | Butter |
3/4 | ts | Lemon rind; grated |
3 | tb | Lemon juice |
1/8 | ts | Yellow food colouring |
BREAD PUDDING: Scald milk and butter. Pour over bread cubes and let stand 5 mionutes. Combine remaining ingredients and add bread and milk. Pour into buttered 1-quart baking dish. Place dish in a pan of hot water. Bake atr 375 deg F for40 to 45 minutes until a silver knife inserted un center comes out clean. Serve with lemon sauce LEMON SAUCE: Dissolve cornstarch in cold water. Stir in half and half and sugar. Simmer 3 minutes, stirring. Remove from haeat and stir in remaining ingredients. Make 1 cup. Serve warm on bread pudding.
