1 | tb | Cornstarch |

2 | c | Milk |
2 | | Egg yolks |
1 | tb | Butter or margarine |
1 | ts | Vanilla extract |
Combine sugar, cornstarch, and salt in a small saucepan; gradually stir in
milk. Cook over medium heat, stirring constantly, until mixture comes to a
boil. Cook 1 additional minute, stirring constantly. Remove from heat.Beat
egg yolks at medium speed of an electric mixer until thick and lemon
colored. Gradually stir about one-fourth of hot mixture into yolks; add to
remaining hot mixture, stirring constantly. Bring mixture to a boil over
medium heat and cook 1 minute, stirring constantly. Remove from heat; stir
in butter and vanilla. Pour mixture into 4 (6-ounce) custard cups. Cover
with plastic wrap, gently pressing directly on pudding. Chill. Yield: 4
servings.
