Title: Old Fashioned Bread Pudding with Apple-Raisin

Vegetable oil spray | ||

1/4 | c | Granulated sugar plus 2 ts |
1/4 | c | Brown sugar |
1 | ts | Vanilla extract |
1/2 | ts | Cinnamon |
1 | ts | Nutmeg |
1/4 | ts | Cloves |
FOR THE SAUCE | ||
1 1/4 | c | Apple juice |
1/4 | ts | Ground teaspoon |
1/2 | c | Apple butter |
1/4 | ts | Ground nutmeg |
2 | tb | Molasses |
1/2 | ts | Orange zest (opt) |
1/2 | c | Raisins |
Preheat the oven to 350 degrees. Spray an 8-by-8-inch baking dish with vegetable oil spray. Make the pudding: Lay the slices of bread in the baking dish in 2 rows, overlapping them like shingles. In a medium mixing bowl, beat together the egg, whites, milk, the 1/4 c granulated sugar, the brown sugar and vanilla. Pour the egg mixture over the bread. In a small bowl stir together the cinnamon, nutmeg, cloves, and 2 teaspoons sugar. Sprinkle the spiced sugar over the bread pudding. Bake for 3- to 35 minutes, until it has browned on top and is firm to the touch. Make the sauce: Stir together all the sauce ingredients in a medium saucepan. Bring to a simmer over low heat. Letsauce simmer 5 minutes. Serve warm sauce over bread pudding.
