Title: Jenny Grossinger's Rice Pudding

2 | c | -water |
3/4 | ts | Salt |
1/2 | c | Raw rice |
3 1/2 | c | Milk |
3 | Eggs | |
1/3 | c | Sugar |
2 | ts | Vanilla extract |
1/2 | c | Raisins |
2 | tb | Melted butter |

Preheat oven to 325 degress. Put the water and saslt in a saucepan and bring to a boil. Cook the rice in salted water for 15 minutes Drain, then add milk. In a large bowl, beat the eggs, then add the sugar, vanilla, raisins, butter and rice mixture. Pour into a 2-quart casserole and place in a pan of water. Bake 25 minutes. Stir and sprinkle with nutmeg. Reduce the heat to 330 degrees and bake 1 hour longeror until a knife inserted in the center comes out clean. Serve warm or cold.
