Title: Orange Bread Pudding

Yield: 6 Servings
13 | Slices white bread; cut in quarters | |
1 1/2 | c | Orange juice |
1/4 | c | Butter (1/2 stick) |
1 | c | Sugar |
2 | Eggs | |
1/2 | ts | Lemon peel; grated |
1/4 | ts | Cinnamon |
Preheat oven to 325 degrees. In a large bowl, combine the bread and orange juice and beat with an electric mixer until smooth. In a medium- size bowl, cream the butter and sugar until light and fluffy; add the remaining ingredients and mix until creamy. Add to the bread mixture; mix well. Pour into a 1-1/2 quart casserole dish that has been coated with nonstick vegetable spray and bake for 1 hour, until the center is set and puffy. Serve immediately.
