Title: Cranberry Pudding with Rum Sauce

2 | ts | Baking soda |
1/2 | c | Hot water |
1 | Can whole cranberry sauce | |
1/2 | c | Molasses, dark or light |
1 1/2 | c | Flour |
Sauce: | ||
2 | Eggs beaten | |
2 | tb | Melted butter |
1 | c | Sugar |
1 | c | Cream whipped |
1/4 | c | Rum |
Combine baking soda and water in a bowl. add remaining ingredients and mix well. Pour mixture into a well greased pudding mold or 2 empty coffee cans. Cover tightly with foil and place on a trivet in a large pot with 2 to 3 inches of gently boiling water in it. Steam gently for 2 hours. Make rum sauce: add butter to beaten eggs. Gradually add in sugar while beating. Fold in whipped cream and rum. Serve warm pudding in champagne glasses or dessert bowls topped with rum sauce. Wrapped pudding makes a wonderful gift with rum sauce in separate jar.
