Title: Rice Pudding with Dried Fruits

Yield: 4 Servings
1/2 | c | White rice -- medium grain |
1/3 | c | Sugar |
1/2 | ts | Cornstarch |
2 1/4 | c | Milk, 1% lowfat |
1/4 | c | Cranberries -- dried |
1/4 | c | Dried apricot halves -- |
Diced | ||
2 | ts | Vanilla |
Nutmeg -- freshly grated |
In a medium-sized heavy saucepan, whisk together rice, sugar, cornstarch and salt. Gradually stir in milk. Bring to a simmer over high heat, stirring constantly. Reduce heat to low and simmer slowly, stirring often, until the rice is tender and the pudding is creamy, about 20 minutes. Remove from heat and stir in cranberries, apricots and vanilla. Cover the pan and let sit for ten minutes, or unitl ready to serve.
