Title: Double-Chocolate Satin Pudding

1/3 | c | Sugar |
2 | tb | Cornstarch |
2 | tb | Unsweetened cocoa |
1 | ts | Instant espresso granules |
1/8 | ts | Salt |
1 3/4 | c | 2% low-fat milk |
1 | Square semisweet chocolate, (1-ounce) chopped | |
1 | ts | Vanilla extract |
Combine first 5 ingredients in a saucepan; stir well. Gradually add milk, stirring with a whisk. Bring to a boil over medium heat, stirring constantly. Add chocolate; cook 1 minute, stirring constantly. Remove from heat; stir in vanilla. Pour into a bowl; cover and chill 2 hours. Yield: 4 servings (serving size: 1/2 cup).
