Title: Omie's Carrot Pudding

Yield: 8 Servings
3 | tb | Butter |
1 | c | Sugar |
1/2 | ts | Salt |
1/2 | ts | Cloves |
1/2 | ts | Cinnamon |
1 | ts | Grated lemon rind |
2 | Eggs | |
2 | c | Grated raw carrots |
1 | c | Flour |
1 | ts | Soda |
1 | ts | Lemon juice |
Cream butter and sugar. Add eggs. Beat well. Add carrots, spices, salt and flour and soda. Beat well. Add lemon rind and juice. Pour into a greased mold or coffee can. Steam in hot water for 2 hours. Serve with ice cream sauce or hard sauce.
NOTES : Don't be afraid to use a coffee can if you don't have a mold. It does a very nice job as a substitute. Recipe by: Omie Dennis
