Title: Sweet Potato Balls

Yield: 6 Servings
2 | c | Cold mashed sweet potatoes |
1 | Egg, lightly beaten | |
4 | tb | Butter or margarine, melted, divided |
1 | tb | Whipping cream |
1/2 | ts | Salt |
1/4 | ts | Ground nutmeg |
6 | lg | Marshmallows |
1 1/2 | c | Crushed cornflakes |
Mix sweet potatoes, egg, 2 tb butter, cream, salt and nutmeg. Divide into 6 portions. Pat each portion around a marshmallow. Roll in remaining butter and then in cornflakes. Place in a greased 9" pie plate. Bake at 400øF for 15 mintues.
