Title: Breakfast Quiche

Yield: 8 Servings

1 9" pie shell; unbaked
1/2lbSausage; cooked and drained
2cCheddar cheese; shredded (8-oz.)
2cPotatoes; raw, shredded, rinsed in cold water and patted dry
5 Eggs; well beaten
  Salt
  Pepper

Spread sausage evenly in bottom of prepared pie shell. Sprinkle cheese, then potatoes, over sausage. Pour eggs over all. Bake at 425~ for 5 mins., reduce heat to 375~ and bake 45-60 mins., until lightly browned and well set.
