Title: Quiche Lorraine Ala Katherine

1 | 9" Quiche Pastry | |
6 | sl | Cooked Bacon; crumbled |
1 1/4 | c | Swiss Cheese; grated |
1/4 | c | Parmesan Cheese; grated |
3 | Eggs; beaten | |
1 1/2 | c | Half-And-Half |
1/2 | ts | Salt |
1/4 | ts | Pepper |
3/4 | c | Onion; chopped |
1 | tb | Rendered Bacon Fat; use drippings from cooking bacon |
SAute onion until tender. Place bacon, onion and cheeses in pie shell. Blend together eggs, cream, salt and pepper. Pour over mixture in quiche shell. Bake at 375F. for 45 minutes, or until mixture is firm and light brown.
