Title: Chutney

Yield: 8 Servings
1/4 | c | Lemon juice |
2 | tb | Lemon rind; chopped |
5 | Fresh figs; diced (or dried & soaked overnight) | |
2 | Papayas; diced -OR- | |
4 | c | Mexican papaya or honeydew |
1/4 | c | Onion; finely diced |
1 | c | Green pepper or green cabbage; diced |
2 | md | Bananas; thinly sliced |
Pour lemon juice over figs and papayas and let sit 1 hour. Mix in remaining ingredients and pack tightly into a casserole dish. Bake in a 350 degree F oven for 20 minutes or microwave for 5 minutes. Chill before serving.
