  Eggplant, peeled
  Cherry vinegar peppers*
  Mushrooms
  Red onion
  Capers
  Red, yellow & green peppers
  Roma tomatoes
  Olive oil
  Garlic
  White vinegar

Use as a relish on hot dogs -- Definitely an Italian gourmet hot dog.

Making Caponata is a personal thing, so adjust the protions of each ingredient to suit your taste and needs.

Finely chop all the vegetables. Make a marinade by mixing together oil, garlic and vinegar. Add chopped vegetables and allow to marinate at least 4 hours.

Saute for 5 minutes in olive oil and drain before putting on top of grilled hot dogs.
