Yield: 2 Cups
1 | tb | Olive oil |
3 | | Shallots; finely minced |
3 | ts | Ginger; finely minced |
1 | ts | Curry powder |
1 1/2 | | Papaya;peeled,seeded,chopped |
3 | tb | Lime juice |
1 1/2 | ts | Fresh cilantro;fine chopped |
In a small nonstick saucepan, heat olive oil over medium heat. Add
shallots and ginger. Stir-fry 6-7 minutes in the oil. Remove from heat and
stir in curry powder until well-blended. Place mixture in a food processor,
add papayas, lime juice, and cilantro. Process just until blended.
Refrigerate an hour and serve. Makes about 2 cups. Source: Self Magazine
