Title: Caramelized Sweet Onion Slices

3 | | Large Spanish Sweet Onions (about 3 lbs) |
1/4 | c | Butter |
3/4 | c | Granulated sugar |
3 | tb | Packed brown sugar |
2 | tb | Dried thyme, crushed |
1/2 | ts | Salt |
1/8 | ts | Pepper |
Peel and cut onions into 3/4 to 1" slices. Microwave slices at high (100%)
5 minutes. Heat butter in large skillet; add onion slices. Combine sugars,
thyme, salt and pepper. Sprinkle 1 tablespoon sugar mixture over each
slice; cook over medium-low heat about 10 minutes on first side. Turn
slices, sprinkle each slice with 1 tablespoon sugar mixture and cook 10
more minutes. Turn slices and cook 1 minute to caramelize sugar topping.
Keep warm and repeat procedure for remaining onion slices.
