2 | c | Water |
1 | c | Uncooked long-grain rice |
6 | lg | Vidalia onions |
1/2 | c | Butter or margarine |
2 | tb | Fresh parsley; minced |
1/4 | ts | Salt |
1/4 | ts | White pepper |
1 | c | Swiss cheese; shredded |
1 | c | Whipping cream |
Paprika |
Bring water to a boil in a medium saucepan; add rice. Cover, reduce heat, and simmer 10 minutes. Drain and set aside.
Peel and chop onions. Melt butter in a Dutch oven over medium heat; add Onion, and cook 15 minutes, stirring frequently. Remove from heat; stir in rice, parsley, and next 4 ingredients. Spoon mixture into a lightly greased 13" x 9" x 2" baking dish. Cover and bake at 350 degrees 30 minutes. Sprinkle lightly with paprika.
