Title: Crunchy Turkey Salad

Yield: 6 Servings

2cDiced turkey, white meat
1cnCrushed pineapple, in its own juice, drained reserve 2 table
1/2lbSeedless, green grapes, cut in half
1 Carrot, shredded
1/2cChopped celery
1/4cDiced jicama
1/4cSlivered almonds
DRESSING
1/4cPlain low fat yogurt
1/4cReduced calorie or fat-free mayonnaise
2tbReserved pineapple juice
1/4tsCurry, or more, to taste

Combine turkey, pineapple, grapes, carrots, celery, jicama and almonds in medium-size bowl. In glass measuring cup blend mayonnaise, yogurt, pineapple juice and curry. Pour dressing over salad; mix until well coated.

If you like a more moist salad increase the yogurt and mayonnaise to 1/2 cup each, or adjust to your personal taste. (I use Kraft Miracle Whip, to change the pace).
