Title: Crunchy Turkey Salad

Yield: 6 Servings
2 | c | Diced turkey, white meat |
1 | cn | Crushed pineapple, in its own juice, drained reserve 2 table |
1/2 | lb | Seedless, green grapes, cut in half |
1 | Carrot, shredded | |
1/2 | c | Chopped celery |
1/4 | c | Diced jicama |
1/4 | c | Slivered almonds |
DRESSING | ||
1/4 | c | Plain low fat yogurt |
1/4 | c | Reduced calorie or fat-free mayonnaise |
2 | tb | Reserved pineapple juice |
1/4 | ts | Curry, or more, to taste |
Combine turkey, pineapple, grapes, carrots, celery, jicama and almonds in medium-size bowl. In glass measuring cup blend mayonnaise, yogurt, pineapple juice and curry. Pour dressing over salad; mix until well coated.
If you like a more moist salad increase the yogurt and mayonnaise to 1/2 cup each, or adjust to your personal taste. (I use Kraft Miracle Whip, to change the pace).
