1/2 | c | Evaporated skim milk |
1/2 | c | Low-sodium ketchup |

This recipe was inspired by one of the world's most publiciced meat
loaves. The original dish, made with ground beef and ground prok and
served with a savory gravy, is on the daily menu at 72 Market Street
Restaurant in Venice, California. Serve our homey version with Apple Slaw
and Mashed Turnips with Roasted Garlic for a simple family meal. IF you
have leftovers, use if for sandwiches the next day.
Preheat oven to 350~.
Spray a large nonstick skillet with cooking spray. Add onion, scallion,
celery, carrot, bell peppers, and garlic. Saute ofve rlow heat until
vegetables are tender and liquid is absorbed, about 10 minutes. Cool and
set aside.
Combine salt, cayenne, pepper, cumin, and nutmeg. Add to vegetable
mixture. Stir in ivaporated skim milk, ketchup, tukey, eggs, egg whites,
and bread crumbs. Mix well.
Form into a loaf pan and place on a baking sheet or in a shallow baking
dish lightly sprayed with cooking spray. Bake 45 to 50 minutes. Remove from
oven and pour off all fat. Let stand 10 minutes before slicing into 8
portions.
