Title: Zesty Stuffed Potato

1/4cGd. beef or Turkey(2 oz's)
1/4cBroccoli;chopped
2tbOnion;chopped
1lgRusset Potato; baked (8 oz)
2tbMilk;lo-fat
1/4tsEach-basil,celerysalt,nutmeg
1/2cJarlserg or swiss cheese shredded about 2 oz's

Crumble beef into 4 cup glass measure. Sprinkle broccoli and onions on top, Cover with vented plastic wrap and microwave on high 2 minutes or until beef is not pink. Break up beef using fork. Slice V-wedge lengthwise out of top of potato, using about 1/3 of potato. Scrape potato from wedge and inside of potato into meat mixture, leaving 1/4 inch thick shell. Set wedge of potato skin and potato shell aside. Add milk, basil,celery salt, and nutmeg to potato, mash using fork. Stir in cheese and stuff mixture into potato shell. Top with wedge of potato skin. Cover with wax paper and microwave on high 2 to 2 1/2 minutes, or until steaming hot.
