Title: Creole Turkey Pie

Yield: 6 Servings
1 | lb | Ground turkey |
1 | Egg, beaten | |
1 | sm | Onion, chopped fine |
1/2 | Green pepper, chopped fine | |
1/3 | c | Bread crumbs |
1 | ts | Butter |
2 1/2 | c | Sweet potatoes, cooked and mashed or whipped |
1/2 | c | Cheddar cheese, graded |
Cajun seasoning and Tobasco to taste |
This recipe is a Louisiana rendition of shepperd's pie.
In large bowl combine ground turkey, egg, onion, green pepper, bread crumbs and seasoning to taste. Press into 9-inch pie plate. Bake at 350~ for 30 minutes.
In a seperate bowl, combine potatoes, butter, and Cajun seasoning. Carefully spread on top of meat. Top with cheese and return to oven. Bake for an additional eith to 10 minutes or until heated through and cheese is melted.
