Title: Black-Eyed Pea Skillet

Yield: 4 Servings
2 | tb | Vegetable oil |
1 | lb | Turkey; ground |
1 1/2 | c | Onion; chopped |
1 | c | Green bell pepper; chopped |
32 | oz | Cans black-eyed peas; drained |
14 1/2 | oz | Tomatoes; whole, undrained and coarsely chopped |
1/2 | ts | Salt |
1/4 | ts | Black pepper |
In a large skillet, heat the oil over medium heat; add the ground turkey, onion, and green bell pepper and cook until teh turkey is browned, stirring to crumble the meat. Drain off the liquid. Add the remaining ingredients; bring to a boil, reduce heat, and simmer for 30 minutes, stirring often. Go ahead add your own favorite seasoning - chili powder, hot pepper sauce, oregano, or Cajun seasoning.
