1 | lb | Ground turkey sausage OR lean Italian sausage |
1/4 | c | Grated Parmesan cheese |
1/4 | c | Chopped onion |
1 | cl | Garlic, minced |
16 | oz | Can stewed tomatoes, drained |
1 3/16 | c | Chopped green pepper |
1/2 | ts | Dried basil leaves |
1/2 | ts | Dried oregano leaves |
2 | Eggs | |
1 1/2 | c | Skim milk |
3/4 | c | Whole wheat blour |
1 | tb | Baking powder |
1 | c | Shredded part-skim mozzarella cheese |

Cook sausage until browned; drain fat. Chop or break sausage into small pieces. Place sausage, Parmesan cheese, onion, garlic, tomato pieces, green pepper, basil, and oregano in the pie plate. Beat eggs, milk, flour, and baking powder together until smooth, about 1 minute. Pour over sausage mixture. Sprinkle on mozzarella. Bake in a 400~ oven about 30 minutes or until a knife inserted into the center comes out clean. Cool for 5 minutes before cutting. Yield: 6 slices Food Exchanges per slice: 3 lean meats + 1 starch/bread. Nutritional info per slice: 256 calories, 24 g protein, 18 g carbohydrate, 10 g fat, 348 mg sodium, 505 mg potassium, 106 mg cholesterol.
