1pkUNCLE BEN'S Long Grain & Wild Rice Blend (36 oz)
3qtWater
1/4cMargarine or butter
1 1/2cCooking oil
1cLemon juice
3cTomatoes, fresh, diced
1 1/2cGreen pepper, diced
1 1/2cCucumber, pared and diced
1cParsley, fresh, finely chopped

1. Cook rice in water with margarine or butter according to package instructions, for 20 minutes. 2. Transfer rice and remaining liquid to shallow pan, cover and chill. 3. Fold in remaining ingredients. Chill before serving.
