Title: Queen Ranch Chicken

4 | oz | Velvetta cheese -- cubed |
12 | oz | Chicken |
4 | ts | Lite margarine |
1 | Onion -- chopped | |
1 | sm | Can of green chilies -- |
Drained | ||
14 | oz | Canned stewed tomatoes -- |
Chopped | ||
4 | ts | Cornstarch |
1 1/2 | cn | Chicken broth |
4 | Corn tortillas | |
Salt & pepper -- to taste | ||
Garlic powder -- to taste |
1. In a non-stick pan, sautŽ chicken and onion in margarine until done.
2. Add cornstarch and 1 cup broth. Cook 5 minutes.
3. Add 1/2 cup broth, tomatoes, green chilies and cook until thick.
4. In a casserole dish layer tortillas, cheese, and chicken mixture.
5. Bake at 350 degrees for 30 to 40 minutes
