Title: Chicken #23

Yield: 6 Servings
1 1/2 | lb | Skinless boneless chicken breast |
Vegetable oil spray | ||
1 1/2 | md | Green pepper, cut into pieces |
3/4 | c | Salsa |
1 1/2 | tb | Peanut butter |
1 1/2 | tb | Soy sauce, low sodium |
1 1/2 | ts | Ginger root, shredded |
1 1/2 | ts | Garlic, minced |
Rinse chicken and pat dry. Cut into bite sized pieces. Spray a large skillet with vegetable oil. Place over medium igh heat. Add chicken and green pepper to hot skillet. Cook 5 minutes or until chicken is tender and no longer pink. Stir in remaining ingredients. Cook and stir until thickened and bubbly, about 3 minutes.
