Title: Broccoli & Crab Bisque

1cSliced leeks
1cSliced fresh mushrooms
1cFresh broccoli florets
1 Garlic clove, minced
1/4cButter or margarine
1/4cFlour
1/4tsDried thyme, crushed
1/8tsPepper
1 Bay leaf
2 10 1/2 oz cans condensed chicken broth, undiluted
1cLight cream
3/4cShredded Swiss Cheese
6ozPackage frozen crabmeat, thawed, drained and flaked

In a saucepan, cook leeks, mushrooms, broccoli and garlic in butter until broccoli is crisp-tender. Remove from the heat. Blend in flour and seasonings. Stir in broth and cream. Cook and stir until mixture comes to a boil and is thickened. Add cheese. Stir until melted. Add crabmean and heat through. Do not boil. Remove bay leaf before serving.
