1 1/2 | lb | Fresh, ripe tomatoes. |
1 | tb | Chopped fresh sage |
3 | ts | Finely chopped rosemary |
1 | | Clove garlic, minced |
1/3 | c | Extra virgin olive oil |
3 | tb | Chopped basil |
3 | tb | Chopped parsley |
1 | tb | Chopped mint |
1 | lb | Spaghetti |
| | Salt and pepper |
1) Wash; split; seed and dice the tomatoes in 1/2 inch cubes 2) Put
tomatoes and herbs in a large, ceramic bowl. 3) Cook pasta 4) When pasta is
nearly done, heat olive oil to smoking and pour it over the tomato and
herbs (It should sizzle.) 5) Add salt and freshly ground pepper. 6) Drain
pasta and toss with tomatoes and herbs.
