Title: Spaghetti Sauce with Herbs

Yield: 6 Servings

1 1/2lbFresh, ripe tomatoes.
1tbChopped fresh sage
3tsFinely chopped rosemary
1 Clove garlic, minced
1/3cExtra virgin olive oil
3tbChopped basil
3tbChopped parsley
1tbChopped mint
1lbSpaghetti
  Salt and pepper

1) Wash; split; seed and dice the tomatoes in 1/2 inch cubes 2) Put tomatoes and herbs in a large, ceramic bowl. 3) Cook pasta 4) When pasta is nearly done, heat olive oil to smoking and pour it over the tomato and herbs (It should sizzle.) 5) Add salt and freshly ground pepper. 6) Drain pasta and toss with tomatoes and herbs.
