Title: Squash-Corn Casserole (M_c-Tx)

3 | Or 4 zucchini (or yellow summer squash) sliced | |
1 | c | Whole kernel corn |
1/3 | Onion, chopped | |
1 | Jalapeno pepper, seeded and chopped | |
Salt to taste |
Mix above ingredients and cook (or steam) until tender. Drain and top with: 3/4 cup grated cheddar or Monterey Jack cheese. Bake about 10 minutes at 350 .
