1 | lb | Round steak, cut in 1/8" - strips x 2 1/2" long |
2 | | Cloves garlic, crushed |
1 | tb | Olive oil |
2 | sm | Zuchinni, sliced thin |
1 | c | Cherry tomatoes, halved |
1/4 | c | Reduced calorie, bottled, - italian salad dressing |
2 | c | Hot, cooked pasta |
1 | tb | Parmesan cheese |
Cut beef steaks into 1/8 inch thick pieces. Cook and stir garlic in oil in
large skillet over medium high heat for 1 minute. Add beef strips. Stir fry
for 2 minutes. Season with salt and pepper. Remove from skillet with
slotted spoon and keep warm. Add zucchini to skillet and stir fry for 2 - 3
minutes or until tender crisp. Return beef to skillet and add dressing and
tomatoes. Heat through and sprinkle with parmesan cheese. Serve over hot
pasta. makes 4 servings. Each serving = 316 calories, 32 g protein, 9 g
fat, 25 g carbohydrates, 4.2 mg iron, 453 mg sodium, 78 mg chol. Percent of
calories from fat = 25.6%
