1 | lb | Beef round steak - trim well |
2 | tb | Oil |
1 | ts | Cumin, ground |
1 | ts | Oregano, dried, crushed |
1 | | Clove garlic, crushed |
1 | | Pepper, red bell, cut thin |
1 | md | Onion, cut into thin wedges |
1 | md | Jalapeno pepper, cut into slivers |
3 | c | Lettice, romaine, cut 1/4" |
Partially freeze beef and cut into 1/8 inch strips. Combine oil, cumin,
oregano and garlic. In a skillet, over medium high heat, heat half the
seasoned oil. Add bell peppers, onion and jalapeno pepper. Stir fry until
tender crisp. Remove and reserve. Stir-fry beef in remaining oil for 1 to 2
minutes. return vegetables to skillet and heat through. Serve hot. Makes 4
servings. Each serving = 229 calories, 10.9 g fat, 3.7 mg iron, 65 mg
sodium, 65 mg chol. Percent of calories from fat = 42.8%
