Title: Leek Soup

Yield: 6 Servings
1 1/2 | lb | Leeks (about 6 cups) washed, trimmed, and cut into 1 in. pie |
3 | c | Chicken Broth |
2 | Apples, peeled and cut into 1/2 inch pieces | |
1 | Potato, peeled and thinly sliced | |
1/2 | c | Orange Juice |
1/2 | c | Tomatoes, chopped |
1/2 | c | Carrots, thinly sliced |
1 | tb | Fresh basil OR 1 1/2 t dried |
1/2 | ts | Curry Powder |
Salt and Pepper to taste |
Combine all ingredients in a soup kettle. Cover and bring to a boil. Simmer 20 - 25 minutes. Remove from heat and cool slightly. Process in batches, in a blender or processor until smooth. Reheat and serve.
