Title: Smoked Turkey Salad

Yield: 6 Servings

1 1/2lbSmoked turkey; skinned and cut into 2-inch julienne
1 1/2cSherry Mayonnaise salt & freshly ground black pepper
3/4lbJarlsberg cheese; julienne
2cGrapes, seedless, red or grn
1cCelery; chopped pepper, to taste
1tbGreen peppercorns; water- packed; drained

1. Combine turkey, Jarlsberg, grapes and celery in a mixing bowl. 2. Add the Sherry Mayonnaise and toss gently but well. Season to taste with salt and pepper and toss again. Cover and refrigerate until serving time. 3. Arrange the salad in serving portions and sprinkle with green peppercorns to taste. Cooked, lightly smoked ham or chicken may be substituted for turkey.
