Categories: Bbq Ethnic Meat Sauce
Yield: 99 Servings
1 | lg | Onion -- grated |
1/2 | c | Strong coffee |
1/2 | c | Catsup |
1/4 | c | Balsamic vinegar |
2 | tb | Sugar |
3 | tb | Worcestershire sauce |
1/2 | ts | (to 1) |
1 | Freshly ground pepper -- to | |
1 | Taste | |
1 | Tabasco sauce |
Mix all ingredients in saucepan. Bring to boil over high heat. Simmer until thickened, about 40 mins. Cool. Makes about 1 cup. This barbecue sauce is especially good over ribs, but it is wonderful for all types of grilled meats and chicken.
FOR RIBS: With a pair of kitchen shears, partially cut between the bones of 4 to 5 lbs. of ribs, both top and bottom, not cutting completely through. In a large kettle, boil enough water to cover ribs. Add the ribs. Continue to boil for an additional 20 mins to remove fat. Drain. Meanwhile prepare either gas or charcoal fire. Grill ribs on first side for 10 mins. Turn the entire rack for ribs. Grill second side for 10 mins. Baste with lots of coffee barbecue sauce. Grill basted ribs for 15 mins. Turn ribs. Baste second side with sauce. Grill 15 mins. Repeat twice more or until ribs are fully cooked. Serve with extra, unused sauce for dipping. This recipe can be used for indoor cooking; follow all directions, except bake ribs in a preheated 350 F oven.
