Title: Potato Crumpets

Yield: 16 Crumpets
2 | c | Warm water |
1 | pk | Yeast |
1/2 | c | Mashed potatoes |
1/2 | ts | Salt |
1 1/2 | c | Flour |
Add yeast to the water and let it soften 10 min. Add the potatoes, salt and flour. Mix and beat 3 min. The batter will be thin. Cover and let stand in a warm place for 1/2 hr. Beat and let stand two more times. Place muffin rings on a med hot greased griddle and fill rings 1/3 full. Brown and turn. Cool on a rack. Split and toast to re-heat.
