Title: Ginger Cheese Gems

2 | c | Flour, all-purpose |
1 | tb | Baking powder |
1/2 | ts | Soda |
1/2 | ts | Salt |
1/2 | ts | Ginger, ground |
1 | Egg; well beaten | |
1/2 | c | Molasses |
1/2 | c | Buttermilk |
1/4 | c | Butter (or marg.); melted |
1 | c | Cheese, Cheddar; shredded |
1/4 | c | Raisins, seedless; or dates |
Combine flour, baking powder, soda, salt, and ginger in large mixing bowl. Mix egg, molasses, and buttermilk together, and add to dry ingredients along with melted butter, shredded chees, and raisins. Mix only until dry ingredients are moistened. Fill greased muffin pans two-thirds full. Bake at 400 degrees for 12 to 15 minutes.
